I dunno about you but I like having something sweet around the house for when the craving hits. You can find me roaming the kitchen after dinner (especially if it’s a mediocre one consisting of salad and whatever sprinkling of protein I managed to include). In these instances, instead of succumbing to the cookie aisle and bringing home pre packaged danger, I like to snack on something homemade so that I at least find solace in the fact that there aren’t any hidden fats, sugars or carbs. Girrrrrrl. I love me some suga, and I indulge once in a while but on the days I’m trying to be a little more disciplined – a healthier snack that satisfies my sweet tooth hits the spot.
My mom shared this recipe with me (she’s the Queen of modifying baked goods to suit a more health conscious diet) – and I was more than happy to give it a shot since I’ve had them in the past a few times. BONUS – it’s eggless (yay Vegans!) *apologize if I’m completely ignorant here about Veganism and hidden ingredients that might not be Vegan after all*
I really don’t feel like I need to state this little (and sometimes completely unwelcome) disclaimer, but I will anyways. You eat more than one or two max a day? Don’t come to me.
